Typical Valencian Dessert Recipe – Pumpkin Sponge Cake “Coca De Llanda”

The so-called “cocas” are one of the Valencian staple dishes. Cocas can be savoury (flatbreads with a topping or two) and sweet (sponge cakes).
This sweet pumpkin sponge cake is called “coca de llanda” in Valencia. After a meal at a traditional restaurant you would typically get a piece of coca de llanda with your chupito (a shot of liqueur).
What you will need:
500-600 g (18-21 oz) fresh pumpkin, peeled and cut into chunks
180-200 g (6.3-7 oz) sugar
3 large eggs
110 g (3.9 oz) extra virgin olive oil
240 g (8.4 oz) all purpose flour
10 g (0.35 oz) baking powder
Optional: sugar, walnuts and cinnamon for sprinkling on top.
Firstly, put the pumpkin chunks into a plate and wrap around with plastic film. Cook in the microwave at full power for 15 minutes. Remove the film carefully and grill in the oven or microwave for another 10-15 minutes until it becomes slightly charred (pictured above).
Preheat the oven at 180 degrees C (350 degrees F).
Once the pumpkin is cooled, blend with sugar, add eggs, flour (added gradually), baking powder and oil. Mix well together.
Put a sheet of baking paper into a 25 x 35 cm form (approx. 10″ x 14″) and pour the dough into it.
If desired, top with walnuts, cinnamon and sugar.
Bake for 35 minutes. Let it cool and enjoy this bright and moist (..veggie-loaded wink wink..) cake!
